The scent of spring is in the air and Easter is near! In the garden of the Hazelnut House, the first harbingers of spring are poking their heads through the blanket of snow. Theresa Baumgärtner invites us into her fairy-tale garden and welcomes the reawakening of nature with wonderfully light spring cuisine.

After the long winter, we long for tender greens, fresh wild herbs, and a picnic with children in nature. We gather wild garlic in the forest and violets in the meadow and bring them, still dewy, into the kitchen. The children quickly catch the spring fever and craft cheerful “dandelion lions” and garlands made of dandelion fluff. Theresa delights us with fresh cucumber soup, asparagus–fennel risotto, and a heavenly strawberry dessert. Come, let’s dance into May!
